An Apple Cake a day…

Apples Late fall and closing up on winter is the best time for apples. It is easy to find local grown apples both in markets and your regular grocery store.

I am not the biggest cake fan, but there are few moments tasting better than when you put your teeth in a lukewarm apple cake with hand whipped cream or vanilla ice-cream.

I inherited this recipe from my mother, but I have made some minor adjustments to make it a bit more healthy and moist. This cake (if you manage to stay away) keeps fresh in the fridge for almost a week. Especially if you have a microwave to preheat the pieces for a few seconds.


Preheat the oven to 180 degrees Celsius

2 eggs whipped together with 2 dl of sugar (at least for five minutes)

100 grams of melted butter (chilled a bit)

1 dl of cultured or sour milk

0,5 dl of regular milk

3 tablespoons of sour cream, yoghurt naturel (preferable Greek style) or crème fraiche

3 dl flour

1 teaspoon of vanilla sugar

2 teaspoons of baking powder

As many apples as you like. I prefer to put from 4-8 apples in my cake, depending on the size, but the more the merrier… and healthier. Chop them into preferred size.

It is important to stir in all the ingredients lightly into the whipped eggs. If you stir too much, it looses the fluffiness and will fall together.Apple Cake

Bake the cake in the form of your preference. It could be a spring form pan or even muffin cups. It is a good idea to put some pieces of apples in the bottom of the form before you put the batch in. And then you just put in all the apple pieces.

On top of the cake you sprinkle a bit cinnamon and brown sugar.

The baking time of the cake depends on the form, but a regular spring form takes about 40-50 minutes. Check it with a knitting needle or something similar. If it is clean when it comes up from the middle of the cake, it should be ok.

Eating It:

Serve the apple cake with vanilla ice cream or whipped cream. You´ll get the best whipped cream if you whip it by hand and add a little vanilla sugar. A few seeds of pure vanilla will give it an extra touch.

Drinking It:

I prefer a cup of hot chocolate with my apple cake, with yet another dash of the hand whipped cream, but if you want to use it for dessert, a chilled glass of Moscato d Asti would taste great. Vietti or Massolino have wonderful Moscatos.
